Tostado my own Belizean RecipeI if unable to get the crunchy corn tortilla. Buy soft yellow corn tortilla and fry them in oil until crunchy.
Ingredients:
1 package Crunchy Corn Tortilla
4 pieces chicken breast
2 tbsp Cumin
2 tsp Salt
2 tsp Black Pepper
4 plugs garlic clove
1/2 Cabbage diced
2 large Tomato Diced
1 large Onion Diced
1/2 bunch Cilantro chopped
1 lime
1 package shredded cheddar cheese
Method:
Wash and clean your chicken breast,place in slow cooker overnight. Prior to doing so season chicken with salt,pepper,cumin,thyme and oregano. Once meat is in add a little olive oil,water and crushed garlic. Set on low and let the meat tender rise.If done the same day turn on to high. Once chicken is tender shred meat.
Combine the diced tomato,onion,cilantro and squeeze lime add salt and black pepper to taste.
To Prepare:
1 tortilla,next the chicken,tomato and cilantro slaw. Cabbage on top add the cheese.
