Belizean Boil Up or should i say Garifuna People

Boil up is a main staple of the Southern part of Belize..Dangriga/Stann Creek and the Toledo district. It has now become a staple of the entire country because of its health and nutritional reason... They are 3 easy steps to making this delicious dish he goes: Sauce for Boil up:: 1 Onion (sliced) 1 Tomato 1 tblsps margarine 1 small sweet pepper 1 tblsp tomato sauce 2 tsp sugar Method: Melt magarine,add onions,tomato and sweet pepper. Add water and season to taste Add tomato sauce and sugar cook until blended. Vegetables for Boil up: 1/2 cup cabbage shredded 1 carrot shredded 1/4 cup hot water 2 to 3 medium coco cut up or Yuca 1 Yam cut up 1 cassava 1 pigtail cut off excess fat 4 green bananas sliced 2 firm ripe banana 2 sweet potato 12 eggs 2 lbs Fish ( Red Snapper preferably) Clean Fish with lime. Get your meat guy to scrape and pre clean fish Peel ground foods and cut into small pieces Boil them until fork tender remove from pot. Cook fish in the water in which the ground food was cooked.When tender remove from water.Boil eggs remove from water. Boil Cake: 2 cups flour 2 tsp baking powder 1/2 cup water Mix all ingredients together. knead and make into 6" balls and flatten. Boil these on top of your ground food. Combine all ingredients on a plate the sauce goes on top of everything
