Back to my Belizean Mayan roots today it's rainy still so we will feast in soup. Not just any soup but Black DinnerR

Relleno also know as Black Dinner 1 Chicken 4 to 5 lbs 1 dozen eggs 1 onion 8 oregano leaves 1 pkg chimole seasoning or 10 slices burnt toast 14 spice seeds 1 tbsp annato grain or 4 balls re recardo 10 pugs garlic 6 hot peppers 3 tomatoes 2 tsp black pepper 3 lbs ground pork 10 whole cloves 1 sprig apasote or fresh oregano 1 tsp cumin seeds Method: Wash and clean chicken with vinegar and lime. Season chicken with salt and pepper. Boil 8 eggs until hard so for about 20minutes or so. Cut egg whites into small pieces. Grind remaining seasoning finely. Mix salt and 2 tbsp ground seasoning with pork. Cook on medium heat for 30 to 40 minutes and leave to cool. When cold, add3 raw eggs and mix well. Stuff chicken with pork mixture and halved boil egg yolks. Mix 2 cups water and remaining seasoning and strain into large covered pot. Add chicken,giblets and apasote water to cover chicken. Cook until chicken is tender add large chunk tomatoes and the rest of eggs.Make a paste to thicken with 1/2 cup flour with 1 cup water stir well. Then add to soup mixture to make a nice and smooth texture. This so so very tasty you will enjoy.....
