Sunday Dinner Stewed Conch over Coconut White Rice....Lick yuh finga good...
Stew Curry Conch over Coconut Rice and fried plantains, caribbean cole slaw. Super supper
2lbs Conch tenderized
1 Onion
1 tsp black pepper
1 tsp flour
1 tsp salt
Method:
To tenderize conch if the fish monger cannot tenderize for you. Clean conch by peeling off dark outer skin and blanch. To blanch is simple (put into cold water,bring to a boil,throw away water). or use a pressure cooker to tenderize.
Season the conch with salt,black pepper,onion powder,garlic powder,thyme little oregano. Cut carrots,sweet peppers,onions and tomato. Brown the flour in a little oil preferably coconut oil.
then add veggies in to hot stewing pan after onions are translucent add conch and curry powder mixed with water enough to cover the conch and veg. Let the pot simmer for about another 30 minutes this will create a wonderful gravy on very low heat.
Then sit down with your family and eat it up!!!!!!!!!!
