Whats on the menu today you ask? Escabeche
Escabeche is (Mestizo Dish) so i tried looking up the meaning of the word but it constantly came up as fried fish or escovish fish
however in Belize it's neither its a soup of onions very tasty and enjoyable here goes:
Ingredients:
3 lb stewing chicken
3 plugs garlic
12 spice seeds
1 tsp salt
1/2 tsp black pepper
1 tsp thyme
4 oregano leaves
1 habanero pepper
3 lbs onion
1 tsp margarine
Vinegar to taste however start with 1/4 cup
Method:
Clean your chicken and season with salt and pepper.
Put chicken in water with and add garlic,oregano,spice seeds,cloves and habanero.
Boil and simmer chicken until tender.
Remove chicken from water in about 40 min and bake in the oven to make crisp and brown.
Add vinegar and more water to pot ( you should have about 4 cups of liquid)
Bring to boiling point then add onions that have been thinly sliced.
Just as water boils and the chicken is brown cut chicken up placed in liquid and turn the heat off.
Add the margarine and black pepper.
Serve with fresh corn tortillas.
Serving size about 6
