Spicy Curry Chicken Caribbean style

Very simple and easy to make..

I whole chicken cubed for curry
1 tbslp salt and pepper
1 sprig rosemary chopped
1 sprig thyme chopped
1/3 can coconut milk
2 tblsp curry powder
1 tsp nutmeg
2 tblsp jerk seasoning
1 small potato
1 small onion
 jerk seasoning the basic ingredients are chilies, thyme, cinnamon, ginger, allspice, cloves, garlic and onions. This gives jerk its distinctive flavor that is both hot and savory. Basically any combination that includes the  scotch bonnet peppers, garlic, onion and some spices could be considered Jerk.


I first bought a whole chicken and had the butcher cubed the chicken as he called it.
I came home with about 30 pieces of meat and bones ( that's the important part) bones.

I washed the meat and season well with sea salt, pepper, thyme and rosemary , garlic powder and of course recardo. If unable to get recardo i substitute paprika .

Place meat in oven to brown with small cubed potato and onions. This takes about 45 min.
Remove from oven and add a mixture of curry powder,coconut milk and spicy jerk seasoning. Pour on top of meat and place back in the oven for another 20 minutes or so until gravy is to you consistency.
