Jonny Cakes oir Journey Cakes because they will last for a while and still taste fresh. fresh

Recipe

Ingredients:
2 cups Flour
1/2 tsp salt
2 tsp baking powder
2 tbsp shortening
3/4 cups coconut milk or evaporated milk

Method:

Mix flour, baking powder, and salt in a bowl. Add shortening then add you milk until dough is soft but held together . Knead thoroughly. (To knead, pick up the far edge of the dough and fold over the bottom edge. Press down with the heels of your hands, pushing the dough away from you. Turn the dough one quarter turn and repeat the process. When properly kneaded, bread dough will be smooth and satiny, stretchy and no longer sticky). Make in small balls let it rest for about 30 minutes or so, then flatten. Place flatten balls on a greased baking tray. Prick the cakes with a fork about 3 set of fork imprints. Bake in 450* for approximately 12 to 15 minutes or until cakes are firm to touch. Once you remove from oven immediately cut in half and butter. Its ususally served with cheese and fried beans....
