Fry Jacks was what i served for breakfast this morning...

Fry Jacks so i was wondering where the name came from then i got the story of the name.
Its from an old logging camp in Belize called gallon jog from the cook Mr jack Usher who had nothing to bake his bread with so had to fry his bread.Well that's the story they i was given. So here goes:

3 cups flour
1/2 tsp salt
3 tsp baking powder
11/2 tbslps  shortening i used clarified coconut oil
11/2 cup evap milk mixed with coconut milk both combined to make the cup and a half

Method;

Combine flour,baking powder and salt.
Cut coconut oil in flour.
Add milk to make a soft but not sticky dough.
Knead lightly.
Cut into rounds, let rest for 30 minutes or more
Flatten and cut each round in 4 to 6 pieces.
Heat frying pan and fry each piece.

Best eaten hot with cheese...
Finished product..enjoyed when eaten hot
