Ricardo seasonings (often spelled recardo or racardo) is a type of spice used in many Central American dishes. It comes in two types: black and red. Both have a strong smell similar to vinegar. The red variety is frequently used to season meats, while the black is used in many soups.
If you would like your chicken spicy i sometimes add a little jerk seasoning to meat to make the flavor stay in....I usually season my meat one or two days in advance.
I usually cook chicken by browning stove top. Heat large skillet with coconut oil, brown chicken one piece at a time, throw away excess fat. Add chicken pieces back into the pot with the the rest of seasoning from the dish before you add in add water and a little coconut milk to bowl then pour mixture into chicken pot.
Let it simmer for about 30 minutes or until the gravy is formed on low heat. Sometimes i place my chicken in the oven to finish cooking.
Once it is finish its served alongside the Rice and Beans,Chicken and Potato salad...Whic equals 1, 2, 3.
