Ingredients:
2 cups sliced fresh or frozen rhubarb
1 can unsweetened pineapple tidbits
1/2 cup sugar
2 tbsp plus 1/3 cup all purpose flour
1/3 cup quick-cooking oats
3/4 tsp ground cinnamon
1/8 tsp salt
1/4 cup cold butter whipped cream optional
Method:
In a large bowl,combine the rhubarb,pineapple,1/4 cup sugar and 2 tbsp flour. Transfer to a 9 inch deep dish pie plate coated with cooking spray.
In a small bowl, combine the oats,cinnamon,salt and remaining sugar and flour. Cut in butter until crumbly. Sprinkle over fruit. Bake,uncovered at 350* for 30 to 35 minutes or until fillings is bubbly and topping is golden brown. Cool for 5 minutes serve with whipped cream if desired.
