Lemon Meringue Pie of course how we do it in Belize

Ingredients: 1 cup Flour 2 oz shortening 4 eggs 3 lemons 2 tsp granulated sugar Cold water 1 tsp cream of tarter
Method: Put flour in mixing bowl.Rub shortening lightly into flour with fingers until mixture resembles fine bread crumbs. Using a knife mix to a stiff dough with cold water. For meringue: Combine milk and eggs yolks of eggs. Add lemon juice. Line a greased pie tin with dough,then place filling inside. For topping: Wisk egg whites stiffly fold in sugar and cream of tarter to a stiff peak. Put the egg whites mixture on the top of filling. Bake for 15 to 20 minutes at 350.
